Valea Verde Retreat – Transylvania
Scope: Founding & Full Concept Development | Role: Founding Shareholder, GM 2006 – 2023, Chef | Period: 2006–Present
Valea Verde Retreat is a pioneering rural hospitality concept founded by Jonas and Ulrike Schäfer. Nestled in restored Saxon farmhouses, it offers immersive guest experiences and contributes meaningfully to the local economy. Jonas led the full development of the concept, guest journey, and operational model, positioning Valea Verde as a benchmark for sustainable hospitality in Eastern Europe.

Valea Verde Restaurant
Scope: Culinary Concept & Operations | Role: Chef & Owner | Period: 2006–Present
This award-winning restaurant reflects Jonas Schäfer’s culinary ethos of local, seasonal, and imaginative cuisine. Recognized by Gault Millau and Chaine des Rôtisseurs, it anchors the Valea Verde experience. In 2025, it will expand with the launch of “The Old Vicarage Cooking School – by Jonas Schäfer,” offering immersive culinary education rooted in Transylvanian traditions.

Prince of Wales Guesthouse – Viscri
Scope: Operational Refresh | Role: General Manager, Chef | Period: 2019–2020
Jonas was entrusted with reimagining the operations at this royal guesthouse, including hosting King Charles himself. He introduced a new F&B concept, refreshed the room experience, and implemented efficient tech-driven systems to streamline operations at this heritage site.

Jonas advised Anna and Tibor Kalnoky on enhancing the estate’s hospitality offering. His work included redefining guestroom concepts, redesigning F&B experiences, and creating a unified corporate identity to align marketing, guest experience, and brand perception.
